Red Peas Soup with Salt Beef Recipe (Jamaican Style)

Ingredients
1 pound salt beef
1 pound red kidney peas (red beans)
3 Seeds pimento
1/2 pocket cock soup mix small piece pumpkin
6 liters water (maybe more)
1 medium-size carrot
2 cloves garlic (crushed)
2 stalks scallion
1 pound yellow yam (peeled, washed, sliced)
1 pound sweet potatoes (peeled, washed, sliced)
1/2 teaspoon salt
1 small Irish potatoes
1 medium-size green scotch bonnet pepper
1 sprig fresh green thyme
2 sachet coconut milk powder or use this method
1 pound all-purpose flour
Instructions
Soak the Red Peas and salt beef overnight.
Pour water into a large pot, add red peas, garlic, pimento seeds, and salt beef cover pot and bring to boil until peas and salt beef is softened or cooked.
Peel Irish potatoes, carrot and pumpkin, wash then diced them.
Cover pot and allow vegetables to cook. prepare the dough with the flour in the meantime.
Peel sweet potatoes and yellow yam
Wash, slice, or chunk then add to the pot.
Add coconut milk to the pot, cover, and allow to simmer for twenty minutes. Add dumplings (Spinners) to the pot (make them small) then add a cock soup mix. Stir and simmer for ten minutes.
Wash scallion, thyme, and pepper, then add to the pot.
Cover pot and continue to simmer over moderate to low flame, stir every three minutes until soup becomes thick. add salt to taste.
2 medium onion, 5 sprigs thyme, 5 cloves crushed garlic, 2 scotch bonnet pepper, 1 teaspoon black pepper.
2 teaspoons salt to taste
lemon or lime juice
1 small diced potato (optional)
1 cup water
METHOD:
Clean, skin,and cut chicken in small pieces,then wash with lime or lemon juice
Drain, season with curry, onion, thyme, garlic, allspice (pimento), black peppers, salt and let marinate for a while. TIP: Set aside onion, thyme, garlic, and allspice for a 2nd seasoning while cooking.
In a skillet pour about 3 tablespoons of oil. Let oil heat.
Add the chicken & seasoning
Lightly brown the chicken & seasoning for 5-7 minutes in the skillet
Add water and scotch bonnet pepper. Let cook for 25 minutes or until done. TIP: Add the second seasoning 5 minutes before turning off the heat.
