Turtle Steak Recipe (Cayman Style) Tortuga de Res
Prep and Cook time: 1 1/2 hours
Serves 4
INGREDIENTS
2 lbs farm-raised Green turtle meat, steak is the best to cut into 4 pieces at 7-8 ounces each steak
3 tablespoons fresh lime juice
2 teaspoon garlic powder
1 tablespoon ground black pepper
2 tablespoons coconut oil OR 3 tablespoons vegetable oil
1 medium yellow onions, sliced
1 sweet green or red pepper, cored & sliced
2 or 3 seasoning peppers, diced fine
1 teaspoon garlic powder OR 2 fresh garlic cloves, minced
2 teaspoon dried thyme OR 1 large sprigs fresh thyme (optional)
2 (1/4 or 1/2 ounce) cans stewed tomatoes (optional)
2 teaspoons Season-All salt OR 2 teaspoons seasoning salt
3 tablespoons Worcestershire sauce
2 tablespoons Pickapeppa Sauce
Directions
- Tenderize the turtle steak, (Put the steaks in a ziplock) bag gently pounding both sides well with a meat mallet until pieces are only about an 1/4 or 1/2 inch thick.
- Sprinkle with lime juice, 2 teaspoons garlic powder, diced seasoning peppers, and black pepper and refrigerate for an hour.
- Heat oil over medium-high heat in a large heavy skillet or Dutch oven until hot and brown the turtle steak on each side.
- Add onions and sweet peppers and cook until vegetables start to soften, stirring frequently so they don’t scorch.
- Add remaining ingredients and stir well, reduce heat to low while simmering and cover.
- Cook on low heat for 30-45 mins or until the turtle is fork-tender and sauce is reduced and thickened. Try to not lift the pot cover as least as possible (if you dont have too) not let out that steam which will help tenderize.
- Serve with hot White rice or Rice n’ Peas, Boil or Roast Breadfruit, Cayman style Mac n Cheese, Mash Potato or Potato Salad, Veggies of the day or Fried Ripe Plantain
