Soups ~ Cayman Vegetarian Pepper Pot Soup Recipe

 

Cayman Pepperpot soup is a great way to eat vegetables. This recipe is flexible. You can easily make a wonderful vegetarian version of this soup by omitting the meat or seafood and using vegetable bullion cubes.

You can also make different versions of this soup by substituting the meats used below with Pork, Shrimp, Lobster, or Chicken or you can just go Coconut milk and callaloo for a vegetarian soup.

What is Callaloo?

Callaloo is the name used in the Caribbean to refer to the large green leaves of the taro, dasheen, tannia, amaranth, or yautia root. The Caribbean country you are in determines which vegetable is used as “callaloo.” In most preparations, it is cooked as you would prepare turnip or collard greens.

In the U.S., it is often difficult to get the leafy green readily, so it is common to use spinach as a substitute. Also, callaloo can go by the name bhajgee (bah-gee). Canned Callaloo is also a substitute if you can not find fresh.

 

INGREDIENTS 

  • 1 lb Callaloo (approximately 8 stalks) – (Please search Google “How to prepare Callaloo” )
  • 1 lb Kale (optional) (If mixing with Kale then only use 4 stalks of Callaloo)
  • ½ lb. okra
  • ½ lb. pig’s tail and/or ½ lb. salt beef (Please search Google for “How to prepare salt pig’s tail or salt beef)
  • Flour dumplings (spinners)
  • ½ lb yam and dasheen (coco)
  • 2 Stalks escallion
  • 3 Stalks Fresh Thyme
  • 1 Scotch bonnet pepper
  • 1 can or a cup of Coconut milk
  • Black Pepper
  • 3 Quarts water

 

 

METHOD (If using Pork)

  1. Soak the ½ lb. pig’s tail and  ½ lb. salt beef overnight
  2. Cook the pig’s tail and beef until both are tender
  3. Add the callaloo boil meat and vegetables.
  4. Puree vegetables and return to the pot adding dumpling.
  5. Then add the diced yam, dasheen (coco), coconut milk, and other seasonings to taste.
  6. Add the whole Scotch bonnet pepper to the pot.
  7. Add the spinner flour dumplings
  8. Simmer for approximately 45 minutes to an hour.
  9. Add black pepper and stir
  10. Serve hot

 

Serves in a 16oz cup for CI$8 or 32oz cup for CI$16
