Shrimp Salad w/ Avocado Recipe (Cayman Style)
Juice of 2 limes
½ cup tomato or cherry tomato, diced
¼ cup onion, diced
1 cucumber peeled, seeded and diced (optional)
½ cup green sweet peppers, diced (optional)
1 hot scotch bonnet pepper, de-seeded and minced (add more pepper for extra Spice)
Salt and pepper to taste
Place in mixing bowl with all remaining ingredients.
Cover and let the shrimps and vegetables marinate in the refrigerator for at least 15-20 minutes.
Mix and serve alone or on a bed of lettuce leaves
