Shrimp Salad w/ Avocado Recipe (Cayman Style)

Serves 4-6 
Ingredients
2lbs 21/25 Shrimp shell of and deveined
Juice of 1 small orange
Juice of 2 limes
½ cup tomato or cherry tomato, diced
¼ cup onion, diced
1 cucumber peeled, seeded and diced (optional)
½ cup green sweet peppers, diced (optional)
1 hot scotch bonnet pepper, de-seeded and minced (add more pepper for extra Spice)
1 stalk celery, diced (optional)
1/2 avocado (optional)
5 season peppers, diced
Salt and pepper to taste
Directions
Boil on low heat until tender for 7-10 mins
Let shrimp cool
Leave whole or cut the shrimp in small pieces.
Place in mixing bowl with all remaining ingredients.
Cover and let the shrimps and vegetables marinate in the refrigerator for at least 15-20 minutes.
Peel and cut up Avacado in small pieces and fold in carefully
Add salt and pepper to taste.
Mix and serve alone or on a bed of lettuce leaves
