Corned Beef ~ Jamaican Bully Beef Recipe or with Cabbage or White Rice

 

Bully beef (tin beef) can be eaten cooked or uncooked. “Tin beef” or aka “Bully beef” is also labeled corned beef. Not to be confused with the sliced corned beef sold as a cold cut in a Deli. Corned beef is called “salted beef” in Jamaica, but in Cayman, “Salt Beef” is actually salted beef, not in a tin.

Bully Beef (aka Corned Beef) is a classic, simple and affordable dish in many Caribbean households. Its diverse quality of being able to satisfy the breakfast, lunch, snack and dinner cravings, makes it one of those “Jack of All Trade” dishes. Folks always say “once you have bully beef in your house, you will never go hungry.”

Ingredients

  • 1 tin Corned Beef
  • 1 medium onion, sliced
  • 1 clove garlic, chopped
  • 2 sprigs fresh thyme
  • 1 medium ripe tomato, chopped
  • 2 stalks scallions, chopped (Green Onion)
  • 1 Scotch Bonnet or 2 Season Pepper de-seed and chopped
  • 1 tablespoon coconut or vegetable oil
  • Black Pepper (to taste and optional)

 

Instructions

  • Heat oil in a heavy-bottomed frying pan (skillet) over medium heat.
  • Add onions, garlic (optional), and peppers to the frying pan. Sauté for a few minutes until onions become translucent.
  • Add thyme and Corned Beef. Turn down heat to medium-low and stir or mash the beef with a fork until cooked and desired consumption.
  • Add chopped tomatoes, scallions, stir well and cook for another 3 minutes. Use paper towels to absorb the extra coconut oil, if any.
  • Bully Beef is usually served for breakfast with Johnny Cakes, boiled green bananas, Cabbage, or just toast. It can also be served with white rice as lunch or dinner or snack like a sandwich but raw with Mayonaisse (optional) with all peppers and spices mixed well into a spread.
  • Leave out these ingredients below if raw in Sandwiches.
