Conch Salad Recipe (Cayman Style)

Serves 4-6 
Ingredients 
Approximately 3-4 cooked cleaned conch meats
(If your preference is raw conch) Tenderize them in a zip lock or plastic bags and cit into 1-inch pieces or smaller.
Juice of 1 small orange
Juice of 2 limes
½ cup tomato, diced
¼ cup onion, diced
1 cucumber peeled, seeded and diced
½ cup green sweet peppers, diced
1 hot scotch bonnet pepper, de-seeded and minced (add more pepper for extra Spice)
1 stalk celery, diced
5 season peppers, diced
Salt and pepper to taste
Directions
To prepare conchs, clean and wash with lime, Soften the conch by pounding with a meat pounder.
Boil on low heat until tender.
Cut the conch in small pieces.
Place in mixing bowl with remaining ingredients.
Cover and let the conch and vegetables marinate in the refrigerator for at least 15-20 minutes.
Add salt and pepper to taste.
Mix and serve.
