Cayman Steamed Fish Recipe

Serves 3 

  • 3 Snapper fish (Yellowtail, Red or Pot Snapper or you’re preference)
  • 1tbsp. Black pepper
  • 1tbsp All-purpose seasoning
  • 1tbsp. Fish seasoning
  • 1/2 cup sliced mixed Sweet peppers (optional)
  • 1/2 cup Onion
  • 3 cloves garlic
  • 1/2 cup Tomatoes
  • 1 /2 or 1 chopped scotch bonnet pepper (Very spicy)
  • 4/5 Branches of fresh thyme
  • 2 fish tea stock
  • 1 cup of water
  • 1/2 cup of sliced carrots
  • 1/2 cup okra (optional)
  • 1/2 cup potatoes (optional)
  • 1 tbsp. butter
  • 1/2 cup (Scallion) spring onions
  1. Firstly fine-scale, wash and clean snapper fish with lime and water. (Ask the butcher to clean and remove insides if you don’t, super cleaned ask to remove dorsal and side bottom fins and trim of tail fin)
  2. Then score your fish with a sharp knife on each side 2 or 3 times. if the fish is too big then cut vertically (Bone-in & head) or filet sides. Your preference!
  3. Season fish with Black pepper, All-purpose seasoning, and fish seasoning massage all over and into scores of fish. You may also season inside of fish if whole.
  4. Then add Fresh thyme, and spring onions inside the fish then set aside.
  5. Put your frying pan on high heat and add 1/4 cup of fish stock
  6. Then add  1/4 cup of everything the sweet peppers,1/4 of Onions, garlic, fresh thyme, 1/4 carrots, 1/4 potatoes.1/4 okra,1 or 1 /2 chopped scotch bonnet (Deseeded).1/4 a cup of the tomatoes. Add some more Black pepper and 1tbsp of butter.
  7. Mix and simmer for 5 mins.,
  8. Then add your snapper to the pan and then pour the rest of your fish stock on top
  9. Add the remaining vegetables on top of the fish
  10.  Cover and cook for 20 mins on medium heat
  11.  Serve with Crackers, Bammy, Boil Breadfruit or Hardough bread.
