Cayman (Caribbean) Christmas Ham
Serves 6 – 8
A traditional (Cayman Island) Caribbean Christmas &/or New Year Day dish. This tender & juicy ham joint with a sweet glaze will have you & guests, drooling for more! Please bear in mind the heavier the ham you use the longer you’ll have to roast in the oven for. Enjoy and Merry Christmas!
- 2.7kg Gammon Ham
- 4-6 Pineapple rings
- 4-6 Glazed cherries
- 3 cup Water
- ½ cup orange juice/Pineapple juice
- 1 tsp. Ginger
- 15-20 cloves
- 1 cup Brown sugar
- 340g Guava jelly
- 170g honey
- 1tsp. nutmeg
- 1tsp. cinnamon
- 1 tsp. All-purpose seasoning
Directions:
- Wash ham with a small amount lemon, vinegar and water mixed, then pat dry with paper towel or clean tea towel.
- Add 1 cup of water to the roasting pan to add moisture to the ham.
- Then place Ham in the roasting pan and wrap in foil.
- Then add place ham in a pre-heated oven at 180 degrees for 2 hours
Making the glaze
- On high heat add 2 cups of water to your saucepan,
- Followed by ½ cup of orange or pineapple juice.
- Then add 1 tsp. of dried or fresh ginger and 6 cloves.
- Then add 1 cup of brown sugar, the honey, and guava jelly mix and bring to a boil
- Then add nutmeg, cinnamon, and other seasonings.
- Cook the glaze for 30 minutes until thick.
- Take the ham out of the oven after 2 hours let cool down and remove the skin, leaving a little bit of fat remaining on the ham.
- Then score the top of the ham diagonally twice with a knife about 3 – 4mm, and stud the ham with cloves.
- Pour the glaze over the ham and return to the oven for 1/1.5 hour until golden brown at the same temperature.
- Remove the ham 10 minutes before time and garnish with pineapples rings and cherries with toothpicks and place ham back in the oven.
- Remove cloves if desired and serve.
