Enchilada dinner. Whole meals. Microwave or regular oven. This familiar Mexican meal combines Amy’s popular black bean enchilada and sauce with organic pinto beans and Spanish rice accented with organic golden corn and green peppers. It’s dairy free and, of course, absolutely delicious. Family owned since 1987. After the birth of our daughter Amy in 1987, we found there we little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we started Amy’s Kitchen to prepare delicious meals for those who care about the food they cat but are often too busy too cook. We use only the finest ingredients and prepare them with the same careful attention in out kitchen as your would in your own home. No meat, fish, shellfish, poultry, eggs or peanuts are ever used in any Amy’s products.

Filtered Water, Organic Rice, Organic Pinto Beans, Organic Corn Tortilla (Organic White Corn, Water, Trace of Lime), Organic Tomato Puree, Organic Corn, Organic Onions, Organic Zucchini, Organic Bell Peppers, Organic Tofu (Filtered Water, Organic Soybeans, Magnesium Chloride), Organic Black Beans, Expeller Pressed High Oleic Safflower and/or Sunflower Oil, Organic Sweet Rice Flour, Spices, Sea Salt, Organic Tapioca Starch, Olives, Organic Garlic, Organic Green Chiles, Chives.
DIRECTIONS
Directions: Ovens may vary. Microwave Oven: Make a 1-inch slit in overwrap. Cook on high for 3 minutes. Remove overwrap. Stir rice and beans. Cook on high for 1-2 more minutes. Let sit 1 minute. Serve. Conventional Oven: Preheat oven to 400 degrees F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 45-50 minutes. Let sit 1 minute. Serve. Toaster Oven: Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.
