When we were looking for a recipe to add to our Whole Meals collection something that would satisfy the urge for down-home cooking, our chef, Fred, who has created so many masterful Mexican and Italian dishes, surprised us with this delicious meatless alternative to a comforting childhood favorite. The loaf slice, made from a blend of legumes and organic vegetables, is covered with a perfectly seasoned, tomato-based gravy and accompanied by fluffy organic mashed potatoes, tender organic green peas and golden corn kernels that keep their own flavor without butter. This is food at its best, and we know you’re going to love it. Amy’s Kitchen does not use any peanuts, fish, shellfish or eggs. Family owned since 1987. After the birth of our daughter Amy in 1987, we found there was little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we started Amy’s Kitchen to prepare delicious meals for those who care about the food they eat but are often too busy to cook. We use only the finest ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. No meat, fish, shellfish, poultry, eggs or peanuts are ever used in any Amy’s products.

DIRECTIONS
Directions: Ovens may vary. Microwave Oven: Make a 1-inch slit in overwrap. Cook on high for 4 minutes. Remove overwrap. Stir potatoes. Cook on high for 1 more minute. Let sit 1 minute. Serve. Conventional Oven: Preheat oven to 400 degrees F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 45-50 minutes. Let sit 1 minute. Serve. Toaster Oven: Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.
