Soups ~ Cow Foot (Heel) Soup (Cayman Style)
Bone marrow is one of humanity’s first superfoods, eaten by our early ancestors and full of protein, calcium, phosphate, and magnesium. Cow foot stew is also revered as an aphrodisiac and recommended as a hangover cure.
Bikorimana further explains that for minerals such as calcium, silicon, sulfur, magnesium, phosphorous, and trace elements, cow heels are the best choice and the advantage is that these minerals exist in a form that can easily be absorbed by the body.
Ingredients:
– 3 – 4 quarts water
– 2 lbs Cow foot
– 1/2 pound carrots, diced or cubed
– Large potatoes, skin peeled and medium cubed
– 3 cloves garlic
– 2 stalks scallion chopped
– 1/2 lb of Coco or Cho Cho, chopped
– 1 lb Pumpkin chopped
– 1 tbsp Complete Seasoning
– 6 pimento seeds or allspice berries
– Cilantro (optional)
– Okra, desired amount and diced or whole (optional)
– Corn (optional)
– Yellow Yam (optional)
– 1 – 2 teaspoons of Salt & Black Pepper to taste
– 1 whole Scotch Bonnet or Habanero pepper (whole not busted)
– 1 medium Onion diced
1. Boil Cow Foot in water to soften, in a large pot on medium heat. Just til it starts turning a grey color about 1 hour
2. If there is grease floating at the top you can spoon that off
3. Chop up all your Potatoes, Yams, Coco, Cho Cho, Okra, Carrots, Garlic, Scallion, Onion, etc. into bite sizes. (not pimento berries)
4. Put all your vegetables and Pimento into the pot with the cow foot and boil together. Add in your complete seasoning, and salt and black pepper and your whole pepper. Then add potatoes, Corn, Yams, and pumpkin and let it boil high for about 30-45 minutes on low-medium heat.
Remove Pimento seeds and pepper.
If you wish it to be really spicy then pop the pepper 10 mins before.
