Jerk Mayo Beef Burger (Jamaican Recipe)
Jerk is a national dish and a national obsession in Jamaica. Dating back to the time of slavery, the cooking technique was developed as a method for runaway slaves to cook food without being caught. Traditionally, they would dig a pit, light a fire of sweet wood, then lay the meat on top, covered by a piece of tin, then bury it. This method allowed little smoke to escape but made the meat falling-off-the-bone tender. The technique is similar to the imu used by Hawaiians to cook Kahlua pork.
Jerk is a complex blend of seasonings including scallions, onions, scotch bonnet peppers, salt, thyme, allspice, black pepper, and many other spices. All of its ingredients grow on the island’s fertile green landscape.
Ingredients

1 ½ Pounds ground beef

1 ½ tbsp Jerk Seasoning

1tbsp All-Purpose Seasoning

Fresh Thyme

Chopped Red onion

2tbsp Soy Sauce

1 /2 Cup Mayonnaise

1 Lime
-
Fresh Cilantro
-
2 Cloves Garlic
DIRECTIONS

Place Ground Beef in Bowl, Wash off using ½ Lime. Drain Ground Beef.

To a bowl add 1tbsp Jerk Seasoning, All-purpose Seasoning, some fresh thyme, ½ Chopped Red onion, crushed garlic, and Soy sauce.

Mix well. Form mixture into patties.

Place each patty on the non-stick grill. Cook for 5 minutes on each side.

Place Mayonnaise in a small dish.

Add ½ tbs Jerk Seasoning, fresh cilantro, ½ lime ½ chopped red onion.

Mix and set aside. Place beef patty in Burger bun.

Pour over Jerk Mayo Sauce. Serve with Jerky Jerk Fries.
